Chinese Turkey Lettuce Wraps

THE perfect summer dinner? Chinese Turkey Lettuce Wraps!  This dinner is light, refreshing, crunchy and delicious!  Serve with a great chilled white or rose wine for the perfect light summer dinner.  This recipe serves for easily.IMG_9042

Chinese Turkey Lettuce Wraps

2 TBSP vegetable oil , divided

1 tsp sesame oil

4 cloves garlic , minced

1/2 cup shallots , minced

2 tsp fresh ginger , minced 

1/4 tsp dried chili flakes

1/2 cup bamboo shoots , finely chopped (in the “international” section of the grocery store)

1 cup shiitake mushrooms , stems removed and chopped

1 cup carrots , finely diced 

2 lbs ground turkey (or ground chicken if you prefer)

3 TBSP hoisin sauce (plus more for serving)

2 tsp low-sodium soy sauce

sea salt, to taste

black pepper, to taste

1/4 cup green scallions thinly sliced, for garnish (optional)

1/4 cup cashews and/or peanuts chopped, for garnish (optional)

1 -2 heads butter, bibb or romaine whole leaf lettuce leaves, separated, washed and driedIMG_9014

IMG_9016Heat a wok or large sauté pan over high heat. Add 1 tablespoon vegetable oil and 1 teaspoon sesame oil and heat. Add garlic, shallots, ginger and chili flakes, and stir-fry for roughly 2 minutes (making sure the garlic doesn’t burn).IMG_9017

Add the bamboo shoots, mushrooms and diced carrots, stir-fry for about 3-4 minutes. Transfer vegetables to a bowl, and set aside.

Return the wok or pan to the stove, and heat over high heat. Add another tablespoon of vegetable oil, and then add the ground turkey.IMG_9022
Cook and crumble the turkey until it is no longer pink, about 4 minutes. Add the hoisin sauce and soy sauce, and stir to combine.

Then add the stir-fried vegetables and black pepper. Season meat mixture with more salt and pepper as you like.

To serve: Spoon meat and vegetable filling into each lettuce leaf (cup),  and sprinkle with chopped cashews and sliced scallions if desired. Top with additional hoisin sauce if you prefer!
