Beef Burrito Bowl
I adapted this recipe from several that I have seen to make a hearty fall weeknight dinner that isn’t loaded with bad carbs. It’s packed with so much flavor there’s no way you’ll miss that unhealthy flour tortilla!
1 lb ground beef
1 onion, diced
1 cup salsa
2 TBSP extra virgin olive oil
2 cups cauliflower rice
1 tsp ground cumin
½ cup fresh cilantro, rough chopped, divided
1 cup black beans, rinsed
1 cup radishes, cut thin
1 -2 avocados, diced
Shredded cheddar or monterey jack cheese, salsa and sour cream for topping
In large skillet over medium high heat, add the ground beef and onion.
Cook until the ground beef begins to brown and the onion turns translucent, about 6-8 minutes. Drain the meat/onion in a strainer and return to the pan.
Add salsa, reduce heat to a simmer and cook another 3-5 minutes to thicken the sauce. Remove from heat and transfer to a bowl.
Wipe skillet clean and return to medium heat. Add olive oil, cauliflower rice and cumin.
Sauté for 2-3 minutes. Remove from heat and fold in ¼ c cilantro.
Assemble the bowls by equally portioning the cauliflower rice between 4 serving bowls and then topping with equal amounts of beef.
Finish the bowls by serving them loaded with black beans, radishes, avocado, tomatoes and sour cream, and garnish with cilantro and lime wedges.
There you have it: a super easy and fast weeknight dinner that’s packed with goodies and is totally delicious! (Don’t tell anyone that I had a few tortilla chips alongside mine though…)
